Sundance Vacations Recipes: Jello Pretzel Salad

There’s supposedly always room for Jello, right?

Well in Utah at least, that statement is true.  Jello, the jiggly fruit-flavored treat, is actually the state snack of the Beehive State.

While most people choose to put the gelatin-based dessert in a mold to make shapes or embed fruit within it, there are actually a number of creative ways to use Jello in a dessert.  This recipe, for Jello Pretzel Salad, actually combines the Jello and fruit idea with the saltiness of pretzels, the richness of cream cheese and sweetness of whipped topping.

While the idea may sound a bit weird at first, I assure you, this dessert is perfect for the summer months and all of those barbecues, picnics and parties that you will be attending over the course of the warm-weather season.  My own grandmother used to make this treat for the family and many other events — regardless of the time of year, mind you — and everyone always seemed to enjoy it.  Plus, with most of the ingredients costing  very little, it can be a great alternative to store-bought or other expensive summer treats.

Prep time will take you around 30 minutes and you’ll need about an hour to complete the cooking for this recipe, putting the total time spend somewhere near and hour and a half.  You’ll get 12 servings out of this, plenty for a small get together or perfect if you are looking to have a dessert that can last a few days for a small family.

Ingredients

  • 1 1/2 cups thin pretzels, crushed (crush them before you measure)
  • 3 tablespoons of sugar
  • 1/2 cup of butter, melted
  • 8 ounces of cream cheese (can use the light version)
  • 12 ounces of Cool Whip (light or fat free is fine)
  • 3/4 cup sugar
  • 2 cups of boiling water
  • 1/2 cup of cold water
  • 6 ounces of strawberry Jello mix
  • 20 ounces of strawberries, sliced (fresh or frozen, use as many as you like)

Preparation

Start by preheating your oven to 350 degrees.

While that is heating up, put the pretzels in zipper sandwich bag and crush them into small pieces using rolling pin or your hands. Once you have them crushed, measure the pretzels and mix together with the three tablespoons of sugar and the butter.  Pat the pretzel mixture into a 9 x 11 pan and bake in the oven for 10 minutes.  Once the crust is cool, mix the cream cheese, 3/4 cup sugar and Cool Whip together and spread out on crust, then set it aside.

Bring two cups water to a boil and stir in strawberry Jello. Add cold water and mix it well, then add your strawberries.  Let that mixture set until slightly thickened, then pour over cream cheese mixture that is already in the pan.  Place the whole pan in the refrigerator until the Jello is firm and then you are ready to serve!

If you are serving it at a BBQ or other outdoor event this summer, be sure to keep it refrigerated until you plan to serve it.  This dessert is not designed to sit out in the sun!  Otherwise, enjoy!
