Sundance Vacations Recipes: Hawaiian Chicken Kabobs

Hawaii is one of those places that is sunny and fun nearly all-year round.

It’s also a destination that is on a lot of people’s travel bucket lists.  To be honest, who can really blame them, the island-destination is a beautiful, tropical paradise that has a plethora of things to do.  That means you can do as much as you want or as little, and still enjoy every minute of it.

Sundance Vacations offers our travelers two destinations on the islands of Hawaii, one in Maui and one on the island of Molokai!  Both are unique in their own ways, but both will allow you to experience all that Hawaii has to offer at a fraction of what you’d pay with any other vacation company!

One thing that Hawaii is known well for is it’s pineapples.  The islands still produces about a third of the world’s supply of them!  Another thing that Hawaiians love is Spam, but we can always save that for another post….

This recipe, for delicious chicken kabobs, incorporates the freshness and tastes of Hawaii.  Also, if you are a vegetarian, you can always remove a few ingredients from this recipe to make it and still have it be just as delicious!

Total prep time for this dish is technically two hours and 10 minutes, due to the marinating, and cook time is about 20 minutes, making the overall time two hours and 30 minutes.  The recipe can be split into portion sizes that you desire, so it could vary, but this recipe should be enough to make eight large servings.

Ingredients

  • 1 small-medium pineapple, cut into large chunks
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • ½ red onion, chopped

Preparation

In a shallow glass dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder.  Stir the chicken pieces, pineapple, peppers and onions into the marinade until well coated. Cover with a lid or wrap and marinate in the refrigerator at least two hours.

Preheat grill to medium-high heat.  Be sure to lightly oil the grill grate to help prevent sticking!  TIP:  If you are using wooden skewers, be sure to soak them in water for about 30 minutes before grilling to keep them from burning.

Thread chicken and pineapple alternately onto skewers and grill for 15 to 20 minutes, turning occasionally, or until chicken juices run clear.  Enjoy!
