Sundance Vacations Recipes: Tipsy Georgia Peaches with Ice Cream

Summertime is here, which means people want to spend less time cooped up in the house and more time outside, enjoying the wonderful weather and making the most of the longer days.  One place no one wants to spend a lot of time during the summer is the hot kitchen!  Many people move their cooking efforts outdoors and cook lighter fare in order to save themselves from sweating and also save some time in the process.

So, in the interest of making everyone’s lives easier, and a lot tastier, this week’s Sundance Vacations’ Travel Inspired Recipe is a very quick way to enjoy a summer favorite and then get right back to enjoying the summer!

When travelers think of Georgia, many associate the Peach with the state, even though it is technically third in production, behind California and South Carolina respectively.  Despite the fact that the state is only third in the nation, Georgia still ships out an astounding 35,250 tons of peaches each year.  The southern state has — millions of peaches, peaches for me — literally.

Although the peaches may be more than enough to get some people to jump on-board with this dish, it gets better!  We add ice cream and a little bit of rum to the mix in order to make an awesome dessert that just about everyone will love.

One tip for this one, obviously the better quality of rum you use, the better the flavor will be.  You don’t have to get crazy, but just something you may want to keep in mind.

This delicious dessert, that will no doubt help you cool down this summer, is a quick and easy way to entertain guests and enjoy some fresh flavors.  The preparation time is really only about 15 minutes and this recipe should net you enough for six servings, just be careful you don’t go too crazy with the ice cream.

Melt the butter in large skillet over medium heat on the stove top. Add sugar and cinnamon and continue to cook, stirring often, until sugar begins to dissolve.  You’ll notice that the mixture may clump together, so remember to stir!  Add peaches and vanilla extract.  Sauté until peaches are tender, stirring occasionally.  It should take about four minutes.  Remove skillet from heat and stir in rum.  Return skillet to heat and cook until sauce thickens, stirring frequently, for about two minutes.  Spoon peaches and sauce over a scoop of your favorite ice cream and serve.  Enjoy!
